Start with the chicken
Marinade is not just for heat: it should season the chicken beneath the breading. A thick, spicy crust can mask bland meat, so taste the chicken itself. Pressure-fried, breaded chicken gives a different result from flame-grilled chicken; neither description automatically tells you whether a burger will be juicy, but it does tell you whether to expect a crisp coating.
Keep the coating crisp
Freshly fried coating loses crunch when it sits in moisture. Sauce, hot steam and a closed wrapper all matter. In an open bun, fillings can slide out; in a sealed bun, they stay contained, but steam can still soften the crust over time. Eat it soon after collection, and judge whether the breading stays attached after a bite rather than by how it looks before serving.
Choose heat with intention
